Plaque / Frozen
Scallop is separated by codes and then washed in potable cold water (<5 ° C) with 0.5 to 1 ppm of free residual chlorine.
Then scallops are tidily arranged on plastic trays and these ones are placed on stainless steel baskets which are placed in forced air freezing tunnels, which uses ecological refrigerant R-404A Freon.
In these stages, we ensure maintenance of cold chain monitoring the process room temperature (T ° <11 ° C) and the product temperature, which are constantly checked.
Tunnels have a capacity of approximately 1500 kg each one, and take 1.5 to 2 hours for freezing product from 10 º C to -24 º C.
Once product reaches a temperature below - 18 ° C, it is removed from the tunnels and packed.
